Strudel is the most famous specialty of Vojvodina and it is prepared throughout Central Europe in various variants. However, Strudel of Vojvodina is different in type of dough and filling than German, Austrian and Hungarian strudel and is one of the few authentic homemade treats. The famous Strudel, as it is prepared in Germanic cuisine, is reminiscent of a dessert we call pie in Serbia, consisting of a central filling wrapped in puff pastry. On the other hand, real homemade strudel is not made of puff pastry but of sourdough, while the preparation is more complex.
In German means whirpool, which is an association in the way the fill is wrapped in dough.
Little is known that coffee is not the only food or recipe taken by the Europeans from the Turks after the unsuccessful siege of Vienna in 1529 – another lucky find at the Turkish camp was puff pastry, which became a real hit in Vienna. The first preserved strudel recipe dates back to 1696 and was also written in Vienna, and like pizza, strudel was originally a dish of the poor because any food item could be wrapped in dough. In the form of sweets, strudel spread throughout Central Europe in the 17th and 18th centuries, when it arrived in Vojvodina, where the recipe for homemade strudel got its present form.
Strudel in our country can be found in a hundred shapes, from industrial sweets to fresh strudel made in specialized bakeries. Handmade strudel can be found on the market counters, among which there are some very good ones, but until recently Belgrade was without a place where it was possible to buy homemade strudel prepared, according to the traditional recipe, of sourdough, proven correctness and quality.
That has changed since the opening of Štrudlica – the first specialized shop for strudel in Belgrade. The Štrudlica team comes from the north of Bačka and although the people from Srem and Banat claim that their strudel is the best, it turns out that our recipe lies with the people of Belgrade and that is why we continue to apply the traditional recipe from Bačka.
Štrudlica began operating in July 2017 on Maksima Gorkog Street, across from Kalenić Market. We decided to go for this location because on Kalenić Market picky Belgraders are being supplied. They are looking for fresh and quality products and it turned out to be a perfect hit, because now the whole Vračar already knows us and many customers come from distant parts of the city for strudel. Older ladies and gentlemen tell us that the strudel we bake is the same as their mother's strudel, while the younger customers are just discovering the taste of the real strudel and from that moment on they become our regular customers.

In our shop we prepare strudel with pure poppy seeds, without any additives and we grind and stew the poppies on milk on our own to make it more delicious.
Strudel can be made at a very low cost if it is fill-saving, even such strudel is very tasty, however we at Štrudlica prefer a rich fill and feel that a certain critical amount of fill is needed to achieve the ideal combination of fill and dough flavors.
Fruits, such as the apples and sour cherries we use for stuffing strudel, are sourced exclusively from proven farm households.
We also buy poppy seeds and walnut directly from the manufacturer and we make homemade jams from apricot and plum that we use to fill our buns and fat buns according to old recipes. During autumn and winter, when there are fresh pumpkins, we also prepare pumpkin strudel, which is our trademark, as well as sweet cheese strudel, which cannot be bought anywhere else in Belgrade. For buns with pork cracklings we use fresh homemade pork cracklings, which completely transforms the taste of the buns and makes it a real speciality.
At every moment, our cooks are making strudel, fat buns, spiral buns etc. – as any strudel or pastry is sold, a new one is already arriving. Everything is done on the spot, from making the dough onwards, which is the main explanation for why the strudel is so delicious. The process takes time, so it may be that some kind of strudel is not finished when the customer enters the store, but customers then choose another strudel and no one complains because they know they got the fresh strudel straight out of the oven.
